Many Cornish bakers have shared their secrets with Carolyn Martin, to give an insight into the wealth of recipes that provide our daily bread.
Breads with traditional names like bloomer, hump top, kettle loaf and saffron loaf are here, with torpedo, rustic French crusty, and the exotic Turkestan.
Most of the bakeries described in this book are small, for it is at the smaller ones that the greatest variety of bread is to be found, but a few of the large bakeries have contributed, to give a balanced picture.
Our Daily Bread records the baking of bread in Cornwall in the early 1990s. In the course of time, some bakers and bakeries included here will leave the scene; others will appear. But the book will continue to be of interest and use, for its history and its recipes, a number of which the author has tested and converted for small quantities to produce delicious bread that anyone can bake at home.
